easy grilled lamb lollipops

Prepare the Lollipops

Trim the lamb, cut into lollipops by making horizontal cuts between each bone. For a cleaner appearance, French the bones by scraping off an inch of meat and fat.

Seasoning

Once trimmed, salt and pepper the lamb chops to taste and set them aside for later use.

Marinade

Flavorful lamb chops are easy to make with a simple marinade of olive oil, garlic, herbs and spices. Coat every crevice and marinate for up to 24 hours.

Preheat and Oil

Preheat your grill to medium-high, or heat your grill pan on the stovetop. Once preheated, lightly oil the grates to prevent sticking (or grease your grill pan).

GRILL

Grill or pan lamb chops, leave space, 3-4 min per side for medium-rare. Adjust cooking time, see chart.

Once cooked to your desired doneness, remove the lamb lollipops from the grill and allow them to rest for a few minutes to allow the juices to reabsorb.
