Mix butter/olive oil, garlic, rosemary, thyme, salt, and pepper. Rub marinade all over the lamb racks. Let it marinate for an hour or up to 24 hours for deeper flavor.
Add wood chips to create smoke. Place lamb racks on the smoker grate. Smoke for about an hour or until internal temperature reaches desired doneness.
