The Best Scallops for Grilling 

It’s no secret that scallops can be on the expensive side. You might feel tempted to go for the bulk frozen scallops at the back of your local supermarket’s freezer, but I strongly recommend against this! Although inexpensive, you’ll be getting preservative-filled, less flavorful scallops.

If in doubt, the best way to go is fresh! Quality is of the essence when it comes to seafood. For great-tasting scallops, I go to my local fishmonger and get the best scallops I can afford. One high-quality, well-made scallop goes a very long way, my friend.😁

  • Scallops – Bigger scallops are best for this recipe. Go for fresh scallops labeled sea scallops instead of bay scallops, which can be too small for grilling.
  • Marinade  This simple and lovely marinade makes flavorful scallops. Garlic, thyme, and parsley enhance flavors. And olive oil, fresh-squeezed lemon juice, cayenne pepper, paprika, and good ole salt and pepper to taste make a spicy base.👌

How to Make Grilled Scallops

Prepping your seafood

Prep Scallops

  1. Prep – Rinse the scallops with cold water and pat them dry with paper towels. Line a large plate with paper towels and place the scallops on it. Top with more paper towels and pat until they absorb all excess moisture. That will ensure a good sear. (Photos 1-2)
  2. Let it rest – Let them sit while preparing the rest of the ingredients.
  3. Prep the grill – Clean the grill grates thoroughly and lightly oil them to prevent the scallops from sticking. Dip a folded paper towel in cooking oil and rub it across the grates with tongs. Preheat your grill to medium-high heat (375-400°F/190-205℃). If using a charcoal grill, make sure the coals are evenly lit and glowing.

Marinate and Grill 

  1. Mix the Spices – Mix the minced garlic, paprika, thyme, olive oil, lemon juice, cayenne, salt, black pepper, and parsley in a small bowl until all the ingredients are evenly incorporated. (Photos 3-4)
  2. Marinate – Add the scallops to the marinade and stir until evenly coated. (Photo 5)
  3. Thread the scallops onto the skewers, covering the front of the skewer with scallops. Also, shake off any excess marinade before threading. Or you can also place scallops directly on the grill without threading. (Photo 6)
  4. Grill scallops for approximately 2-3 minutes on each side until they have a golden-brown sear. Do not overcook, as scallops can become tough and chewy. A timer really helps. But if you don’t have one, keep a close eye on them to prevent overcooking. (Photos 7-8)
  5. Serve and enjoy – Remove scallops from heat, sprinkle with parsley, and serve immediately with desired sides or by themselves. Enjoy!🤤

  • Bacon-Wrapped Scallops: How decadent is too decadent? No clue! Take this recipe over the top with bacon. Wrap your scallops with a slice of bacon, thread it on the skewer, and grill.
  • Marinade Swap: Try a simple Asian glaze with soy sauce, honey, and ginger for a sweet and savory flavor.
  • Spice it Up: If you love heat, make spicy Cajun butter. Melt your butter, add Creole seasoning, and drizzle it over the finished scallops.
  • Pan Seared: Don’t miss out on this deliciousness just because it’s raining. These guys are awesome seared in a cast-iron skillet. It only takes about 5 minutes. Just flip them halfway through so they sear on both sides.

  • Grilled scallops last in the fridge in an airtight container for up to 2 days or frozen for 3 months
  • To prevent the scallops from drying out while stored, wrap them in plastic wrap and place them in a ziplock bag.
