Start by trimming any excess fat from the brisket. Use a meat grinder to grind the brisket, or ask your butcher to do it for you. Alternatively, you can purchase pre-ground brisket from a local market or butcher
Preheat a gas grill to medium-high heat (around 400-450°F or 204-232°C). If using a charcoal grill, light the coals and let them burn until covered with white ash. Create a two-zone fire by placing the charcoal on one side of the grill, leaving the other side without charcoal.
In a small or medium bowl, combine eggs, Worcestershire sauce, and bread crumbs. Mix until the ingredients are fully combined.
Add the ground brisket to the bowl. Also, add minced garlic, minced green onions, salt, and pepper, seasoned to taste. Optionally, include 1-2 tablespoons of burger seasoning for enhanced flavor.
Use your hands or a spoon to thoroughly mix all the ingredients together until well incorporated.
Divide the mixture into equal portions, depending on the number of burgers you want to make. Aim for 6-8 patties. Ensure they are evenly thick and slightly larger than your burger buns.
Repeat the process until all the minced brisket is used.
