Smoked Asparagus

Ingredients

  • 1-1½ pounds asparagus, medium thickness (washed, dried, and woody ends removed)
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 tablespoons parsley, chopped
  • ¼ cup parmesan cheese, shredded

Instructions

  • Start by preheating your smoker to 225℉/107℃. It is highly recommended not to close the lid until the initial blast of smoke clears. Each smoker is different, so follow manufacturer instructions.
  • Line up a few asparagus on a cutting board.
  • Using a sharp knife, cut off the woody ends ( the tough parts of the stalks) just where the green color starts fading into white. Repeat with remaining asparagus until all are trimmed.
  • Place in a large bowl or tray. Season with salt and pepper.
  • In a small bowl, mix olive oil, lemon juice, minced garlic, and Italian seasoning.
  • Add the mixture to the asparagus and ensure that all the asparagus is covered with marinade.
  • Place asparagus directly in the preheated pellet grill. Smoke for about 45 minutes or more, depending on the thickness of the asparagus.
  • Remove from the smoker and sprinkle with the optional parmesan.
  • Serve with desired protein or as an appetizer. Enjoy!

Notes

  • When preheating your smoker, I highly recommend waiting to close the lid open until the initial blast of smoke clears. That said, each smoker is different, so when in doubt, follow the manufacturer's instructions.
  • And speaking of smoker differences, keep in mind that cook time can vary because so many factors are at play here. Your smoker, the thickness of the asparagus, humidity, wind. You might need a few extra minutes, or they might cook quicker than you think. Just watch the timing the first time you make them, and note the cook time that works best for you.
  • In a hurry? Low and slow is best for flavor, but if you need these quicker, just bump up the temp to 350℉/177℃. The asparagus should be done in 20-30 minutes. 😅
  • If you need to buy your asparagus a few days before smoking, trim the ends and keep them in a jar or vase with water in the fridge. Cover them loosely with a plastic bag or wrap, and they should stay fresh for a week.
